This month, we’re showcasing one of the most exciting gastronomic destinations in the world: Donostia / San Sebastián. And we chose the Antxoa from Antonio Bar as the cover, because it features the anchovy in a way we haven’t tried before.

Time to go back to Slow Travel
When you look at the Pintxo bar displays, with so many options, you might be tempted to rush into trying as many as possible. But these dishes are created with care and intention, meant to be an experience. They are complex, with different layers of flavours and arranged to look creative.
So take the time to enjoy the pintxos in Donostia / San Sebastián, at how the elements have been arranged, and about how these different ingredients mix so well.
That would be Slow Travel: not thinking about a destination like a punch card to be completed before flying back home. And actually being ok to miss some of the places you planned to visit, if you want to spend more time in one place.
