This goat cheese pintxo recipe doesn’t require any cooking, and it will take you a couple of minutes to prepare. It’s a great oportunity to experience Basque flavour in your home and share it with your friends and family.
Almost every pintxo bar we went to had goat cheese on their menu. Some had it with jamon, others with onion marmalade, and all sorts of combinations. For this month’s recipe, we decided to make a very simple version that looks creative and is very fun to make.
It combines goat cheese with dried tomatoes and pistachios on top of a slice of baguette. All of these create a nice mix of colours and flavours that will impress your guests. For an extra flair, you can use a Kitchen torch and add some charring to the goat cheese and pistachios.

Goat Cheese Pintxo Recipe
Equipment
- Toothpicks
- Knife
- Kitchen Torch optional
Ingredients
- 1 roll Goat cheese
- 1 jar Dried tomatoes
- 1 Baguette
- Pistachios
Instructions
- Cut the baguette into slices

- Take out a dried tomato from the jar and let the oil drain for a second or two

- Place the dried tomato over the slice of baguette

- Cut a slice of the rolled goat cheese

- And place it on top of the dried tomato

- Optionally, you can use a kitchen torch to char the goat cheese a bit

- This heats it up and gives it a nice color

- Add pistachios for crunch and color

- You can char these a bit too, if you'd like

- Finally add a toothpick in the center to hold all the elements together
