While there are several Gazpacho versions, the Andaluz one is the probably the most famous one. It’s perfect for hot summer days, because it;s served cold and its flavors are refreshing. Here is an easy Gazpacho Andaluz Recipe using a hand blender.

Gazpacho Andaluz Recipe
Fresh and delicious vegetables make the best Gazpacho Andaluz. Leave some time for the flavors to mix and infuze the old bread and you'll get the best results.
Equipment
- Knife
- Chopping board
- Mixing bowl
- Tall jug
Ingredients
- 1 kg tomatoes very ripe
- 250 g cucumber
- 100 g green pepper
- 1 clove garlic
- 100 g stale bread
- 3 tbsp olive oil
- 1 tbsp vinegar
- 1 cup water
Instructions
- Cut the tomatoes

- Cut the peeled cucumber

- Cut the cleaned green peppers

- Clean and cut a clove of garlic

- Add everything to a large mixing bowl

- Cut the bread into cubes

- Mix everything together

- Add 2 tablespoons of olive oil

- Add the sherry vinegar

- Let the mix sit for 2 hours so the juices come out and the flavors mix

- Move everything to a tall jug and add water

- Blend them together

- Plate and sprinkle olive oil
